falling back

 Uffda.  I hate the time change...I dislike the dwindling daylight hours. Someone said "Welcome darkness my old friend."

November is not my favorite month of the year...it is the brown month here in Minnesota everything is a different shade of brown.  

Brown is so boring...how about some blue? Like the waters of the Caribbean...nope not happening...only blue dishes.  

I managed to set the table with Far Guys favorite blue dishes.  We cooked supper for friends that we get together with once a month or so... we served salad, baked carrots and chicken enchilada hotdish...see that towel in the center of the table...yup I plunked down the entire hotdish there....good thing they are not fancy friends! 
 
It was our turn to cook supper...glad we got it done. I fell back on a tried and true recipe that we both like...and leftovers freeze well.  

Chicken Enchilada Hotdish
Cook some chicken in a roasting pan in the oven...shred it then add
1 small tub of sour cream about a cup
1 can of Cream of Chicken soup
Some diced green chilis
Spread the mixture on about 8 flour tortilla shells roll them up and place them in the 9 x 13 buttered baking dish.
Top with remaining mixture and your favorite cheese we like Co Jack about two cups
Bake at 375 degrees for about 40 minutes give or take

    1. Use whatever you like, about three chicken breasts or a mixture of breasts and thighs ...one breast and six thighs. I like to bake my own chicken because then I get the broth....I use skinless chicken.

  2. here in northeast it tends to be gray all winter...in MD we get lots of rain and dreary days, in maine the landscape is mostly bare trees except for conifers...course the snow and sunshine brighten things up but no here in MD...

  3. I'm with you on the color of Brown. Not my favorite. However, your blue dishes sure brightened things up and they are beautiful...I can see why they would be Far Guy's favorite. I snapped a picture of this recipe. It looks so good and sounds like a good comfort food meal.

  5. Those dishes are lovely! The enchiladas sound very good - I'll have to mention them to my daughter as I'm sure she'd like them too.
    I hear you on November, and agree. It's mostly gray and brown here, though we still have a bit of green as a few of the perennials are still hanging in. Won't be long before there is snow and much colder temperatures.

  9. Those blue dishes are gorgeous. I like standard time. I also like the early darkness. I don't know what that says about me😉 November is a dreary brown month in MN. Usually. That casserole sound really good to me.

  12. I also took a photo of the recipe. It sounds a lot easier than my usual chicken enchiladas. Love the blue dishes. Hate the new time. I like it to stay lighter in the evening, but it's much better than in Spokane. At the darkest part of the winter we only got about 7 or 8 hours of daylight.

  14. It’s was really dry here but now we’re getting rain. I saw a sign in town that said our fall colors this year were light brown and dark brown!
