It was a cloudy, rainy day best spent in the kitchen.
Jambalaya is a lot of work...chopping, stirring, building flavors and stirring some more. Far Guy followed the video by the Cajun Ninja on You Tube. Far Guy used a pork butt roast, chicken thighs and andouille sausage. He should cut the sausage into smaller pieces next time or use a different sausage... it was a tad warm...like makes your nose run and your brow sweat. If you were a beer drinker you probably wouldn't notice.
My old cast iron Dutch Oven is just perfect for cooking and then finishing off this dish in the oven.
We omitted celery as neither of us really like celery and sometimes it does not agree with me. We used gluten free broth base and seasonings. Jess and Floyd said to use Cajun two step as a seasoning so we did.
It was delicious and we froze up individual servings. In fact it was so good that I suggested Far Guy cook ALL the time. I had a long nap after my help as a sous chef/dishwasher was complete.
In other kitchen news the window is full of tomatoes.

ReplyDeleteMy son makes delicious jambalaya but I don't make it. I mean, how do you make all that goodness for just one person!! So, I just enjoy what he makes.
ReplyDeleteSounds delicious! And it made me think of my parents cooking for some reason. My French Canadian dad loved to cook - and loved his big garden and loved reading cookbooks for new ideas. He was a really good cook too. I grew up eating things with lots of seasoning when he was cooking. My mom - a good Norwegian who grew up eating much more bland food. She didn't use any spices much beyond salt and little pepper. LOL

ReplyDeleteI think that sounds like a great idea! Wouldn't it be lovely to have someone cook for you everyday? As an aside, I tried to buy andouille sausage here and wasn't able to find it at my local groceries. I suppose I'll have to try a butcher shop.

ReplyDeleteIsn't the internet great?!!! I have learned a lot, too when researching for recipes of even "how to" videos. It enabled me to change out the side mirror on our car when I hit something. I am Not mechanical and that was way easier than I expected I to be - - - but I felt empowered!
ReplyDeleteI have watched many times a cook prepare it on his PBS show. I can't imagine how it would taste. My yellow tomatoes are just now turning color. I have too many red one on three plants.
ReplyDeleteJambalaya always makes me think of mt dad. He loved to sing and one on the songs he sang to us kids often was "Jambalaya, Crawfish Pie". That meal was a big undertaking, but now some other nights you won't have to cook!
ReplyDeleteFun finding a new dish to love, especially when you don't have to cook it ;) Jambalaya is Brad's dish to make at our house. He has tweaked his recipe over the years. It's super yummy!! We love Andouilli (partial to Johnsonville) and use it for many dishes.
ReplyDeleteIt's always good when the man takes over the kitchen. Mine took our kitchen over about 48 years ago. I'm fortunate because we would have starved if we had to depend on my cooking.
ReplyDeleteThe jambalaya sounds yummy but we would have kept the celery in. We both eat a lot of celery, often as a snack with some peanut butter on it.

Glad to hear that far guy's Jambalaya went so well. Sounds like it was a bit of work but well worth the effort. We had fresh sweet corn for supper tonight and split a sub sandwich that Jim picked up at wally world....but it was so spicy, my mouth was breathing fire.....well....almost. I told him to please not get that kind again. He said he didn't like it that well either. The corn was great though!
