Pies

Someone has more faith in me than they should.  I am in charge of pies for Thanksgiving.  Perhaps they just assumed I would bale out and buy some pies at the store..and that was an option I thought about..but dismissed.

I sent out an email and took votes.  Some family members responded and some did not.  I warned them in the email..if you don’t vote don’t complain.

Pumpkin Pie

I considered the votes and made the decision to make Pumpkin ( one of my favorites) and Apple.  I will try to lure in the No Pie votes that were made by two young men by making a Brownie Caramel Pie with no nuts.  I have the recipes out and the items I need entered on the grocery list..I am prepared to bake!

I am also in charge of the Pumpkin Bread..there are no fussy eaters when it comes to pumpkin bread..all of the grands like it.  I use a very old recipe that was shared by Joyce a long time ago.   I always think of her when I bake it and smile..Joyce would have liked that..she was all about food and family and good times shared.

Joyce’s Pumpkin Bread

4 Eggs

3 Cups Sugar

2/3 cup H2O

3 1/3 Cups Flour

1 Cup Oil

2 Cups Pumpkin ( Yellow sticky note says  15 oz can of Pumpkins works fine and it does.  All Pumpkin is not created equal either..I always try to use Libby’s)

1 1/2 teaspoons Salt

1 teaspoon Nutmeg

2 teaspoons Baking Soda

1 teaspoon Cinnamon ( I use about two)

Bake 350 degrees for an hour

( I put all the liquids in a large bowl..mix well and then add the flour..etc.. I usually make a number of small loaves and bake them about 30 minutes.  If you use a bread pan it will take 60 minutes to bake.  This recipe will fill two bread pans.)

I had a heck of a time hanging onto this recipe..I would have to call Nellie and say “give me your Mom’s Recipe again”..and she would.  The last time I got this recipe about 35 years ago..I wrote it in my Betty Crocker Cookbook. Since then I know exactly where to find it:)

  1. Well, thank you so much. Now I don't have to dig out my pumpkin bread recipe. You should be honored you were asked to make pies. No one has ever asked for one of my pies. Cheesecake and fruit salads are my specialty.

  3. I am in charge of pies too and the turkey. The good part of being in charge of the pies is I fix what I like. This year I'm making pumpkin and pecan.
    I'm going to try that pumpkin bread recipe of yours- sounds good.

  4. My mother used to read recipes for fun and I swear she could taste something just by reading the ingredients. When I read your recipe, I think I channeled my mother. And it was heavenly. You can never have too much cinnamon.

  9. Your pumpkin bread recipe sounds moist and delicious! I may have to try it! 'Sure would be good on a cold day like today! Mmmmmm...

    We're havin' three chiffon pumpkin pies, two chocolate pies and a big old apple crisp. My daughter, The Social Butterfly, is in charge of all the desserts.

  11. After reading the pumpkin bread recipe, I know now why I like it so much! It is delicious stuff. Apple pie is my favorite,too.
    My contribution to next week's feast is 'sweet' pickle deviled eggs and fruit salad.

  15. I printed off the recipe. Maybe Tom will stir it up and bake it for me. He likes to cook and bake. I didn't know he liked to cook when I married him. I was just plain lucky.

  16. I like all things pumpkin so this post was one I stared at. I could smell the pumpkin.
    If I thought it would do any good I would copy your pumpkin bread recipe?? I don't think my manager would make it.

  17. Ya know, next year you should have Bet come help you out for Thanksgiving, she makes award winning pies and enjoys it. Oh wait, we'd miss her, never mind.
    You're so good to bravely take on the pie thing. And you take the job seriously, asking folks what kind of pies... Does the turkey person ask what kind of turkey? Did the mashed potato person ask the type of tater... you are so nice to accommodate others how could they possibly complain?!

  18. I just love to read your blog, wish you lived in my neighborhood. I am making pies this year, is not my usual job; I am/was the turkey with chestnut dressing girl. This year I am back to doing it all. The sous chefs (daughter and son-in-law) are painting my sewing room. I thought it was a great trade.

  19. I baked two pumpkin, one blackberry, and one sour cream raisin. Karmyn baked a blueberry for her Jamin' It is his favorite. Blackberry is my youngest daughter's favorite.

    Me? Like my dad said.. Hot or cold.
