Lefsa. It is a process. Jen and Andy cooked up the potatoes, riced them and put them in the fridge overnight on Monday. Far Guy and I heard lots of commotion in the kitchen and wondered what they were doing. Tuesday evening after supper Jen showed me how to mix the butter, salt, half and half and honey. Andy showed me how to mix the flour and riced potatoes. So I was a mixer, Andy a roller, Jen and Far Guy were the flippers on the lefsa griddle. It was a group effort.
Boys will be boys.
Far Guy is feeling lots better today. His appointments went well.
Oh yes it snowed and blowed around. Our first snow. The Interstate highway from Grand Forks to South Dakota was closed.

I'm not familiar with lefsa, but it's certainly fun to make it together.

ReplyDeleteI used AI to tell me lefsa is a Norwegian flatbread that is beloved for Christmas and other holidays. I had never heard of it. RHill, TX
ReplyDeleteFar Guy looks much better. I really enjoy reading about the four of you cooking together and/or taking turns making meals. What do those taste like? They look like a tortilla for a sandwich wrap. Are they eaten cold or will they be part of a casserole dish? Do they taste like a cookie? Thanks for sharing and teaching us something new.
ReplyDeleteYou spread butter and sugar on them roll them up and eat them. You can warm them in the microwave too. Lefsa tastes like lefsa...hard to describe....a soft potatoey concoction:)

ReplyDeleteI-29 ended up being closed all the way to Watertown (halfway through SD) by evening yesterday. We just had the edge of the storm with horrible wind and a little snow and sleet. Making lefsa is definitely a group effort. My girls came one Saturday and we made it together - but didn't manage to do it this year at all. We had fun, and I'm sure we'll get back to the lefsa making in the future when they aren't quite so busy with kid activities. I bought some lefsa at the store yesterday. It's OK - but not as good as homemade.

ReplyDeleteThis is the first time I have heard of Lefsa. So many interesting customs around the world . The "boys" remind me of my two boys. They used to pass things through the star gate. The boys sat across from one another at the table at special dinners. Instead of passing dishes left to right around the table they passed them through the star gate. The star gate was two candles in candlesticks.

ReplyDeleteSo glad far guy is feeling better and I hope it will last! I have ordered lefsa from Olsons in Minnesota a couple of times and it was very good! I put butter and sugar on it or just butter and warm it up! Yummy! Happy Thanksgiving !

ReplyDeleteI went to the nursing home ages ago when MIL was there and we watched Lefsa making. Not a food I really got into, but it was fun watching it being done.

Ahhh! Lefsa! I haven't had any for many years. They are complicated to make but so delicious. We always liked them with butter, cinnamon, and sugar!

LD.....My late wife had a grandmother that lived with them who was full Norwegian. Her mother bought it from an older women in town every Christmas and we ate it with butter and brown sugar all rolled up. I don't think my sons even remember that.
